Watch for New Instruments and Techniques

Laboratory instrumentation is becoming increasingly impor-tant to the food industry and increasingly sophisticated. This is evident from the increasing number of companies providing laboratory equipment, supplies, and services at both the IFT Annual Meeting & FOOD EXPO held last June (and next month) and the Pittsburgh Conference on Analytical Chemistry & Applied Spectroscopy (Pittcon) held last March. In this column, I'll discuss several new instruments and/or techniques applicable to food analysis.
