Welcome to our fourth annual round-up of "The New Kids on IFT's Block." As of April 15, more than 110 companies will be first-time exhibitors at the 1999 IFT Food Expo in Chicago, Ill. Of these, more than 60 are ingredient related. These first-time ingredient exhibitors are highlighted here. For your convenience, their name, country, product exhibited, and booth number are listed in Table 1. Every year I ask myself what these new kids are like. How same or different are they from previous generations? And how do they compare with the other exhibitors? These questions may become even more important as we near the end of a decade, as well as the beginning of a new millennium on January 1, 2001. Will these first-timers offer us any clues as to the "Shape of Things to Come?" Let's find out. This year, nearly one-third of the first-time ingredient exhibitors are from countries outside the United States. We have visitors from China, Taiwan, the Sudan, India, Switzerland, Germany, the Netherlands, Belgium, Spain, Ecuador, Mexico, and Canada.
