Understanding BSE and Related Diseases

The Institute of Food Technologists has issued a Scientific Status Summary that updates our knowledge of transmissible spongiform encephalopathies and provides an authoritative perspective on the regulatory and trade landscape. Here's a synopsis. Bovine spongiform encephalopathy (BSE), also known as mad cow disease, is one of a family of diseases-transmissible spongiform encephalopathies, or TSEs-that can affect cattle and other animals and humans. This family of diseases is the subject of a new Scientific Status Summary issued by the Institute of Food Technologists. This article presents highlights of the Scientific Status Summary.
