Latin cuisine is reaching far beyond the borders of Central and South America, the Caribbean, Spain and Portugal. Latin fare has found a new home in the U.S. Foodservice operators are serving it more and more as the country's population diversifies to include more Hispanics and as more non-Hispanics become familiar with Latin dishes. In the southwest, Mexico has been a major influence on food trends, while in the southeast, particularly Florida, Cuban influences are stronger. However, flavors hailing from South America and the Caribbean are also bubbling up in various regions across the country. College campuses are capitalizing on these trends and serving students authentic Latin recipes that are heating up sales.
