Reports From The Woodlands: MenuDirections Conference confirms prominence of ethnic, portable foods

Nearly all non-commercial foodservice operators surveyed by FoodService Director agree that interest in ethnic foods will either stay the same or grow in the coming year―with dishes falling under the heading "Latino" ranking as the most popular ethnic cuisine being served today. In addition, Thai and Mediterranean foods are expected to come on strong in all non-commercial market segments, along with others such as Middle Eastern and Jamaican. These survey findings were just some of the information on ethnic trends presented at the first-ever FoodService MenuDirections Conference held last month outside of Houston.
