Stanford chef wins NACUFS cook-off

Las Vegas-Raul Lucara, executive chef at Stanford (CA) University, won the 2004 NACUFS Culinary Challenge, held here at the Paris Las Vegas hotel last month during the National Association of College and University Food Services' 46th annual conference. Lucara (see photo No. 4) competed against eight chefs from NACUFS member campuses across the country. His winning dish: Sesame Crusted Salmon stuffed with dark sweet soy shiitake mushrooms, served with an Asian salad and black forbidden rice in a flaming smoked cedar wooden bowl.
