When a kitchen manager noticed something odd with the kitchen ceiling tiles at Luther Crest, a 332-resident long-term care facility in Allentown, Pa., Christine Pacitti, general manager at this Cura Hospitality account, knew she had to act fast. What, at first, looked like a small leak was quickly identified as structural damage, and an engineer ordered an immediate evacuation of the kitchen. "Our immediate concern was that everyone was safe and secure," Pacitti says. "It was really for the employees' safety that we evacuated immediately. We did get through lunch so we had a couple of hours to decide how to handle our residents' dinner." The facility houses three different types of residents: 242 independent living, 60 healthcare residents and 30 assisted living. The menu for the inde-pendent living residents was quickly changed to a cold sandwich for dinner.
