Lovin' Their Salads

As director of dining at Iowa State University in Ames for the past 19 months, Nancy Levandowski still can't believe that nearly all of the 26,000 students she and her staff serve choose a salad component as part of their meals each day. Not taking their healthful dining habits for granted, she's planning numerous additions for the fall salad line-up, including more international fare such as hummus and falafel-also a fit with the growing snacking trend.
