Have you ever been disappointed in a restaurant by a hot entree that is "not so hot"? You can usually blame the kitchen for not heating their plates. A cold plate or soup bowl is the perfect formula for cooling down a hot meal very quickly. In healthcare foodservice, the issue is compounded by extended delivery times that require specialized systems to maintain food temperatures, both hot and cold. Large equipment and extended floor-space is needed in the kitchen, to support the hot and cold food operations.
