Usually this space is devoted to offering my opinion on some relevant topic, a story about a particularly noteworthy piece of news or a memory of a foodservice professional who has made a difference in this industry. This month I'm going to turn over the space to some of our readers who have weighed in with their opinion of my opinion. I always welcome letters and commentary, especially when it contradicts my view; very often I learn something valuable in the debate.
