Saltworks gains kosher certification for gourmet smoked sea salts

Woodinville, Wash.-based SaltWorks recently announced kosher certification for its entire line of smoked sea salts. Its traditional ar-tisanal sea salts were certified in 2007, but the smoked salts required a more lengthy process to achieve the distinction. The company chose the Orthodox Union to oversee certification. Its proprietary smoking process uses wood smoke from bark-free logs, smoking the salt for 24 hours to 7 days.
