Food company Donny Boy opened its high pressure processing facility last month. The factory is fitted with processing equipment manufactured by Spanish company NC Hyperbaric. In high pressure processing, food is first packed into a flexible container and placed in a chamber filled with water. The chamber is pressurised to about 600mPa for 2-5 minutes. The procedure means the food doesrnnot have to be pasteurised or treated with preservatives. According to Food Science Australia, a division of CSIRO, the technique destroys microbes by damaging the outer cell membrane and essential proteins. It can also deactivate some enzymes.rnThe process is less effective if the food has little acidity or water.
