Tea is the UK's favourite drink. How black tea is made, what it consists of and the way it interacts with water make a fascinating chemical story. Tea is the most popular hot drink in the world - almost 2000 million cups of it are drunk every day. In the UK we each drink on average 3(1/2) cups daily, and indeed tea has been the country's favourite beverage for several centuries. Some tea-drinkers have waxed lyrical about it. Samuel Johnson, the famous author, described himself as: A hardened and shameless tea-drinker, who has for twenty years diluted his meals with only the infusion of this fascinating plant; whose kettle has scarcely time to cool; who with tea amuses the evening, with tea solaces the midnight, and with tea welcomes the morning.
