Implantation of oestrogenic hormones in beef cattle: V. Boneless heef yield of steers implanted with hexoestrol

Abstract The carcasses of 31 Aberdeen Angus steers were obtained from an experiment examining the effects of implantation with hexoestrol. Two dose levels of the hormone were involved, namely, 30 mg and 45 mg, with 11 and 10 animals respectively in the two treatments; there were 10 untreated control animals. Each carcass was boned-out at a commercial freezing works to provide wholesale cuts of boneless edible beef, with a fat content of about 15 per cent. All the meat cuts, excess trimmed fat, and bone etc. from each animal were weighed separately. Prices were applied to the yields to permit appraisal of financial differences between carcasses in total value and in the value/lb of the carcass and edible meat. Carcasses of hormone-treated animals were heavier in chilled weight, and the proportion of edible meat was increased by an amount similar to the reduction in the proportion of excess fat.
