Improvement of quality of fats can be carried out by change oftriglyceride structure of oils and fats in the various ways of theirmodifcation. Now the basic methods of modifcation of oils and fatsare technology hydrogenation, hydro inter-esterifcation and interesterifcation [1]. In industrial practice most accepted way of catalystmodifcations of vegetable oils and fats is the technology ofhydrogenation with use of various types of catalysts [2]. Despite largenumber of the catalysts o??ered in technology of catalyst modifcationof cotton oil till this moment there are no concrete recommendationsfor choice the most e??ective catalyst allowing considerably to raisequality and to provide food safety of fnished food fats. Нereforewidely scale researches in the feld of development of new technologiesand hydrogenation catalysts which main advantage is qualitymaintenance and food safety catalyst modifed fats proceed [3].
