摘要

The determination of hop bitter acids in hop cones and pellets is veryimportant for the brewing process because it is in close relationship with the bittervalue of bier. In the Food Safety and Quality Laboratory (FSQL) of UASVM Cluj-Napoca the content of bitter acids is annually determined for the chemicalevaluation of hop crop in Romania. This work present the content in alpha bitteracids of hop cones and pellets from five hop varieties, Hallertau Magnum (HM),Merkur (Mk), Brewers Gold (BG), Perle (P) and Huller Bitterer (HB), producedfrom hop farms located in Sighi?oara aria. The analyses were determined onharvesting time, during the last two years (2012-2013).
