Pre and post-slaughter animal handling by butchers in the Bawku Municipality of the Upper East Region of Ghana

Theobjectiveofthisstudywastodeterminethepre-slaughterhandlingofanimalsandthehygieniclevelofmeatproductionintheBawkuMunicipalityoftheUpperEastRegionofGhana.Thirtyone(31)semi-structuredquestionnaireswereadministeredtocollectinformationfrombutchersonante-mortemandpost-mortemcarcasshandling.Personalobservationswerealsomadetoassessmeatprocessingandhandlingconditions.Theresultsindicatedthat,thestandardofhandlinganimalsandproducingmeatintheareawasrelativelylow.Thereisinappropriatepre-slaughterhandlingsuchastrekkinganimalsoverlongdistancebeforeslaughterwithoutadequaterest,arduousmeansoftransportingliveanimals,mixingofdifferentgroupsandkindsofanimalsduringtransportandnon-withdrawaloffeedjustbeforeslaughter.Thereisalsopoorhygienicstandardofmeatprocessingsuchasdressingofcarcassesonfilthyfloors,inappropriatemeansoftransportingcarcassesandcutstosalepoints,andtheuseofun-sterilizedknivesandslaughteringequipmentsinthecuttingandprocessingofmeat.ThegovernmentandallstakeholdersmustensurethatstandardandhygienicmethodsofhandlingandprocessingmeatintheMunicipalityareadheredto.nbsp;
