Nutritional potentials of cassava tuber wastes: A case study of a cassava starch processing factory in south-western Nigeria

Astudyofcassavatuberwastes(CTW)producedbyacassavastarch-processingfactoryinOndoStateofNigeriawasmadeinwhichthetypesandquantityofthesewastesweredetermined.ThisstudyrevealedthatfivedifferenttypesofCTWareproducedonadailybasisandaresubsequentlydischargedintotheimmediateenvironment.Thesecategoriesofwasteswiththecorrespondingquantities(freshweightbasis)producedbythefactoryare:thecassavastarchresidues(CSR)orpomace(17metrictonnes/day),cassavapeels(CAP)(5metrictonnes/day),cassavaeffluent(CAE)(15.4metrictonnes/day),cassavastumps(CAS)(8metrictonnes/day)andcassavawhey(CAW)(1.51metrictonnes/day).nbsp;TheproximatecompositionofsamplescollectedinrespectofthesefivetypesofwastesshowedthatmoisturewashighestinCAW(96.7%)andlowestinCAS(64.1%).CrudefibrewashighestinCAP(29.6%)butwasnotdetectedinthewhey(CAW).TheCAShadthehighestcontentoffat(5.35%)whileitwasnotdetectedinCAW.ProteinwashighestinCAP(4.20%)andlowestinCSR(1.12%).AshcontentwashighestinCAP(7.47%)andlowestinCAW(1.88%).Thenitrogenfreeextractives(NFE)werehighestinCAW(95.7%)andlowestinCAP(55.5%).nbsp;Theanalysesoftheanti-nutritionalfactorsrevealedthatcyanide,phytate,oxalate,tannins,saponinsandtotalalkaloidswerehighestinCAW(61.1mg/kg),CSR(15,926mg/kg),CAE(674mg/kg),CAP(3.90%)andCAS(0.15%and0.52%)respectivelywhileCAPhadthehighestcontentofPotassium(269mg/kg),Calcium(121mg/kg),Magnesium(236mg/kg),Sodium(261mg/kg)andPhosphorus(3233mg/kg).Ironcontentwashighest(16.2mg/kg)inCAE.Copper(10.8mg/kg)andSelenium(1.27mg/kg)werehighestinCSRwhileManganese(0.43mg/kg)wasdetectedonlyinCAP.Molybdenum,CobaltandArsenicwerenotdetectedinanyofthecassavatuberwastesamples.nbsp;TheseanalysesrevealedthatCTWhaveappreciablelevelsofnutrientsthatcouldbetappedforbeneficialuse.Thelevelsofanti-nutrientsinsomeofthemarebelowthenormaltoxiclevelbutcouldstillbereducedorremovedthroughmethodsdesignedforsuch.Alsothevariousoptionsavailableforproteinenrichmentofthesewastescouldbeexploredinabidtoconvertthesewastestowealth.
