DETERMINA??O DE MACRO E MICRONUTRIENTES EM AMOSTRAS DE VEGETAIS E P?ES COMERCIALIZADOS NA CIDADE DE JEQUIé, BA

A study was carried out to assess the levels of macro (Ca, P, K, Na, Mg) and micronutrients (Fe, Coand Mn) by Inductively coupled plasma optical emission spectrometry ICP OES, in eleven samplesfoodstuff which includes vegetables and breads consumed by inhabitants of Jequié city, BA. Resultsobtained showed the mean ± standard deviation of three determinations. The high content of Ca 2,01 x104 ± 2,0x101 mg Kg-1 were found in cabbage. Highest levels of P 5,92 x 103 ± 3,5 mg Kg-1, Mg 4,60 x103 ± 2,4 mg Kg-1, Fe 1,95 x 102 ± 7,1 x 10-2 mg Kg-1 and Co 1,32 x 10-1 ± 4,5 x 10-4 mg Kg-1, werefound in rocket. Tomato was vegetable with high levels of K 2,71 x 104 ± 24 mg Kg-1 and Na 1,06 x 103± 9,7 x 10-1 mg Kg-1. Mn levels ranged between 7,26 ± 2,30 x 10-3 to 26,3 ± 1,7 x 10-2 mg kg-1 in breadand sweet pepper, respectively. The results compared to the dose of recommended daily intake, Anvisa,show that concentrations of nutrients studied supplies daily needs recommended.
