Andesu netted melon plants ( Cucumis melo L.) were grown under shading conditions during the fruit developing stages. Shading treatment resulted in the accelerated fruit softening and the development of water-core during the ripe to over-ripe stages. Fruits that were grown under shading conditions were also characterized by lowered alcohol insoluble solid content and mol% of galactose among the cell wall neutral sugars, suggesting that the changes in cell wall polymers; i.e., in the disappearance of crude cell wall contents and depolymerization of galactose-rich-side-chains might be result in the development of water-core at the ripe to over-ripe stages.
