Low and no fat products represent a significant - and growing - part of the food market. For dairy companies this presents a challenge. They must strive to manufacture products that have a low calorific value but which retain all the benefits of fat, most notably mouthfeel. Belgium-based ingredients supplier Orafti produces an ingredient that can help dairies make low fat products offering similar qualities to their full fat counterparts. That ingredient is Raftiline inulin.
