Milk fat laws are com plicated beasts with legislation often varying from country to country and for a number of reasons. Some of these are historical while others are designed to protect the consumer. However the essential tests are broadly the same, and include examining key issues such as the use of additives, the presence of contaminants, composition, and labelling and hygiene requirements.
