Dairy plant waste

The growing emphasis on dairy waste treatment, disposal and utilisation is dictated not only by increasing awareness of environmental aspects but also by economic factors. Minimising product loss during processing is of obvious economic benefit to dairy operations. In this connection, a recently published International Dairy Federation (IDF) bulletin, which contains a guide on wastage prevention in dairy plants, is particularly welcome (1). The guide, individual papers of which are referred to below, covers process descriptions, types of waste, sources of loss and waste reduction practices, together with advice on minimising environmental impact and cost. Technical aspects and systematic wastage management make up an overall environmental management system. It also covers methods of measuring flow, sampling and methods of analysis.
