As fifth generation Exmoor hill farmers, my wife and I realised that we had to diversify if we wanted to remain on the farm. We knew about sheep and sheep milking and, since the cheese market seemed very crowded, we had two options -yogurt or ice cream. I don't like yogurt, as it reminds me of school milk that's been left next to the radiator.rnIce cream made with sheep's milk seemed an obvious choice. The milk has a very clean finish and natural creaminess - it is also naturally homogenised, enabling us to produce a wonderful tasting and delightfully textured ice cream. In addition, sheep's milk lactose is in a very digestible form, very much akin to the lactose found in human breast milk. This means that most people who have dairy intolerances are fine with sheep's milk products.
