We've been at Lyburn since 1969 and run about 170 cows. Twelve or 13 years ago, the milk prices were not getting any easier, and we took the long view that we needed to add value to our milk. We'd still be dairy farmers, but getting slightly higher prices. When we started in 1999, there was no point in making Cheddar, so we decided to try a washed curd cheese. The cheeses didn't take too much time to mature and resulted in a Gouda-type cheese. It is not the same as a Dutch cheese, but it is made and produced to cater for what people asked for and liked, at farmers' markets.
