Restaurants in Canada will now be able to openly buy discount mozzarella on the world markets, joining frozen food manufacturers in having access to the world outside Canada's heavily-regulated dairy industry.The Canadian Dairy Commission is creating a new class of milk for mozzarella cheese as of 1 June, according to the Canadian newspaper The Globe and Mail. Previously, such cheese had been subject to a 245.5 per cent tariff, and buyers had been avoiding this by buying the cheese combined with pepperoni in ready-to-assemble packs.
