Sugar alternatives are becoming more popular in dairy, but the question remains how popular they will be. Will the trends in dairy towards full-fat and natural knock them down for future product launches? Stevia producers say that it is the natural aspect of the sweetener that appeals to consumers. Sugar is still a top performer in dairy products, with 45 per cent of German adult consumers preferring sugared versions, while 78 per cent of Chinese consumers opt for the sugared varieties, according to DSM's report on global patterns on sugar reduction. The US has also increased its sugared dairy consumption, with 41 per cent preferring sugared versions of products. Children under 15 continue to drive sugared products consumption globally, DSM reports.
