Despite flailing international milk prices, the overall mood at the International Dairy Foods Association's Dairy Show in Chicago in September was optimistic. Processors such as HP Hood had plans to mitigate the excesses of the liquid milk drops, and other organisations such as MilkPEP (The US Milk Processor Education programme) offered processors ways to do well while doing good. New products were seen as key to the brighter future in US dairy. For example, traditional infant formula ingredients such as choline were being used in more adult drinks, according to Caitlin Merritt, product development, Sensory Effects (division of Balchem): "We're producing products with choline, which is often used in baby formula and to fortify products. One of our sample products is S'mores milk and our ice cream includes extra ingredients." It may be a good time to add further value to flavoured milks, as MilkPEP's CEO Julia Kadison notes, "The sector has increased 6.6 per cent over the last year, and it has seen double-digit increases over the last few months."
