Lactose prices surged during 2007 and they look likely to stay high thanks to simultaneous supply and demand pressures. However, Cargill says it has a way to beat those price rises in the guise of its C_Dex dextrose. Available in a wide range of granulometries designed specifically for the food industry, Cargill says C_Dex dextrose is the ideal sweetness option to substitute for lactose in a whole host of food applications. Here's why. Lactose, or milk sugar, is a widely-used carbohydrate food ingredient, produced commercially from bovine milk derivatives such as cheese whey and ultrafiltration permeate. Because it is produced from milk, the price of lactose is closely linked with the market conditions affecting whey and other milk products. These in turn are heavily dependent upon changes in the agricultural production environment.
