Melt opened in 2006 with an open plan kitchen and a fresh approach to selling chocolate. During my research I noted down all the elements of buying chocolate that I didn't enjoy, such as queuing and pointing to chocolates in glass cabinets. I wanted to create an environment in which customers could watch the chocolatiers at work and help themselves to fresh chocolates. I was more influenced by fashion and design stores in terms of the interior decoration. I was also aware of the emerging trend for being able to view the chef's table and how the making of food, the smells and the noise were so incredibly instrumental in the overall enjoyment of the finished product. That's why it was so essential to have an open plan kitchen in the shop, making fresh chocolates every day.
