As well as understanding viscosity and the way it can affect the processes we use, we need to consider the factors which cause the viscosity of fluids to change. This is vitally important in stabilising processes and achieving consistent quality. While the most common factors which cause changes in viscosity are temperature and composition, there are fluids - generally two or three phase systems - where other factors become more important.
