Further to your publication's reference to the Tottenham Pudding (Letters, CIWM October 2010), I started in the waste industry back in 1960 feeding waste food to pigs. We were known as licensed waste food contractors and fed 35 tonnes plus per day to 5 000 pigs. When the Tottenham pudding plant closed we purchased some of the processing plant and made a Tottenham pudding for local farmers. Waste food was purchased from restaurants, schools, hospitals etc and, in those days, it was a much sought after commodity.
