Cool cordial for cruisers

Gliding past hedgerows at a snail's pace, it's easy to spot the many different species in an English hedge and you won't have to travel far to appreciate that the elderberry bush is possibly the most abundant of all the varieties. The frothy white blossoms of spring and the shiny black berries of late summer provide the forager with an abundant harvest for wine, jelly and a refreshing non-alcoholic drink. I don't think there is anything as pleasant or reminiscent of 'summer sailing' as a cool elderflower cordial. It is easy to make and, as long as you have properly sterilised the bottles, it will keep indefinitely.
