Flatten the escalope thinly. Fry the bacon, garlic and chopped pepper in a lidded saucepan and add the washed spinach until tender. Cover the escalope with the spinach mix and roll tightly securing with cocktail sticks. Any spinach mix remaining can be served as a side dish. Place the turkey on an oven tin and cover with tin foil. Bake for 20 minutes. Remove from the heat, drain off any stock, brush the turkey with oil and cook for a further 10 minutes to brown. In a small pan, heat a knob of butter, remove the pan from the heat and add a scant.
