The British baking industry is alive and well (I jest you not). OK, we've had our knocks and scrapes over the last few years, but my father's wise words still resonate in my ears, "what doesn't kill you, makes you stronger" - and stronger we are. We've had to adapt to different regimes imposed on us from high, and different cyclical buying habits from consumers, now that the major retailers have been given a thumping by the discounters. Also, with shoppers being more choosy, and understanding what is cheap and cheerful compared to what is absolutely top draw, they are prepared to spend their money. Many high-profile high street bakers are now using farmers' markets, because they can sell quality products and at a better margin.
