We were excited when we were told that the theme of this issue of the Wine Industry Journal was refrigeration. When you talk to people in the wine industry about energy efficiency, refrigeration is nearly always the first topic that we, as an industry, usually talk about.rnIt seems accepted wisdom that refrigeration plants are expensive and consume substantial amounts of electricity. It is also often anecdotally reported that refrigeration demands are dominated by cold stabilisation. Some have told us that 70% of a refrigeration plant's capacity at a winery is required to meet the demands of cold stabilisation. Consequently, many wineries are considering or have installed alternative technologies for tartrate stabilisation of wines, like electrodialysis, nanofiltration or contact processes, to decrease refrigeration plant power consumption.
