The identification and characterization of Saccha- romyces cerevisiae strains, isolated from wine, has tra- ditionally been performed by taxonomic methods [2, 11] and enological criteria (killer character, flocculation capacity, etc.) []9, 15]. These methods are laborious, time consuming and may lead to ambiguous results. Modern molecular techniques such as Restriction Fragment Length Polymorphism (RFLP) analysis [7, 8, 13], yeast Chromosome separation by pulse field electrophoresis [4], DNA fingerprinting [5], Polymerase Chain Reac- tion (PCR), using primers homologous to the delta se- quences [12] and Randomly Amplified Polymorphic DNA-PCR (RAPD-PCR) [14] have been utilized for Yeast genetic analysis.
