Determination of nickel in French wines and grapes.

Using graphite atomic absorption spectrometry, Ni concentrations in 80 samples of wine (from 1980, 1983, 1988, 1989, 1990, 1991 and 1993) were 5.4-87.9μg/litre in red wine, 7.5-74.5μg/litre in white wine, 19.5-24.6μg/litre in rose wine and 8.9-26.9μg/litre in Champagne. Ni concentration in grapes ranged from 4.2 to 94.0μg/kg. For a given vineyard and winery, Ni concentration in wine increased with the period of storage suggesting Ni contamination from stainless steel storage tanks and Ni-containing pigment of bottles during the storage of wines. Total daily dietary intake for the French population from wine consumption was calculated to be 4.37μg/day per person. The daily contribution of Ni from wine in dietary intake may be as high as 7%.
