Over the course of this past year the Sweet Science column has been focusing on the traditional "quatre quarts" pound cake recipe. The original cake recipe, which is simply equal parts butter, sugar, flour and eggs, has been our tool to learn about the science of cake batter. After experimenting with mixing techniques and how to use salt and leavening, we looked at each of the core ingredients of the basic pound cake and their respective roles in cake batter.
