American Cake Decorating: What is your cake style and why? Spencer Trygve Oss: I'd describe my cake style as "inspired." It's a mix of all the things that inspire me the most. The textures in nature, modern interior design, and fine art. Like many people, I turned to cake decorating as an outlet during a hard period of my life. It was a therapeutic hobby that brought me peace. Where I found the most joy was finding time to play and experiment without any expectations. It was in this space that I was able to evolve all the things about art that inspired me to cake design. I think this is how my style was born.
