1. To form the heel, take a portion of burgundy fondant previously mixed with CMC and form a small cone to make it easier to insert it inside the silicone mold. Push the fondant into the mold and trim away any excess. Place the mold in the freezer; this will make it easier to turn out without distorting the shape. 2. Once cold, remove the mold from the freezer and carefully turn out the heel. Leave to dry for at least 24 hours, preferably 48 hours. 3. Using a black edible marker, or some black paint, paint the base of the heel as shown. 4. Take a portion of black fondant stiffened with CMC and roll to 5mm thickness. Brush a little water on the flat side of the heel and adhere it to the fondant as shown. Using a sharp knife, cut around the heel.
