Dear Cake Doctors, I love the look of royal-icing designs and I want to have a go at brush embroidery to create some poinsettia cookies. Can you tell me if you need to add anything to the royal icing? I read that adding piping gel makes it easier to work with. Dr. Julie: That's a great question. This was one subject I used to demonstrate in the UK and abroad. You certainly can add piping gel, just add a V* teaspoon to a small bag of royal icing. This is a great technique for beginners because it extends the playing time of the icing and yields a smoother finish. For freestanding brush embroidery (which is quite advanced), don't add anything to the mix.
