本研究以光箨篌竹竹笋为试验材料,对其营养成分、矿质元素含量、氨基酸含量进行分析.结果发现,其含有纤维素等营养成分,丰富的矿质元素以及17种蛋白质水解氨基酸,是一种食味较好,营养丰富的绿色蔬菜,可加以适当发展.%In this paper,Bamboo shoot of Phyllostachys nidularia was taken as the experimental material to analyze the nutrients composition,the content of mineral elements and amino acids.The results showed that the bamboo shoot was rich in fiber,mineral elements,amino acids and other nutrients composition.It is a delicious food appropriate for utilization.
