为延长草头货架期,研究了不同浓度赤霉素(GA3)处理草头20 min,(20±1)℃条件下的贮藏品质变化。结果表明:20 mg/L GA3处理的草头货架期为90 h,50 mg/L GA3处理的草头货架期为82 h,分别比对照延长10 h 和2 h。至货架期结束时,20 mg/L GA3处理的草头叶绿素、蛋白质和 VC含量分别比对照高25.1%、3.2%、5.7%,失重率和氨基酸含量分别比对照低46.7%和8.0%。50 mg/L GA3处理的草头叶绿素、蛋白质和 VC 含量分别比对照高20.0%、6.9%和4.4%,而失重率和氨基酸含量分别高于对照0.36%和34.9%。结论:20 mg/L 的 GA3处理能保持草头贮藏期间的品质。%To increase shelf life of C.burclove,the vegetables were treated by GA3 with different concentrations,the quality changes of C.burclove were investigated under (20± 1)℃ storage.Results:The shelf life of C.burclove treated by 20 mg/L GA3 was 90 h,50 mg/L was 82 h,increased by 10 h and 2 h respectively compared to the control.At the end of shelf life,the contents of chlorophyll,protein and Vc of C.burclove treated with 20 mg/L GA3 were 25.1%,3.2% and 5.7% higher than that in the control respectively,the weight loss and amino acids were 46.7% and 8.0% lower than that in the control respectively.The contents of chlorophyll,soluble protein and Vc of C.burclove treated with 50 mg/L GA3 were 20.0%,6.9% and 4.4% higher than that in the control respectively,but the weight loss and amino acids were 0.36% and 34.9% higher than that in the control.Conclusion:20 mg/L treatment could maintain the quality of C.burclove in storage.
