为明确6CDY 80-12型多用机对湄潭翠芽做形的最佳参数,对多用机做形温度、时间和转速3因素3水平进正交试验,分析其对湄潭翠芽品质的影响,筛选出多用机最佳工艺参数.结果表明:多用机最佳做形工艺参数为做形温度100℃、时间11 min和转速180 r/min.制得的干茶外形扁较直,黄绿较润、较匀整;栗香持久,汤色黄绿明亮,滋味醇、较爽,叶底黄绿明亮、较完整;扁条率为85%,碎茶率为1.1%.%The temperature,time and speed parameters of 6CDY 80-12 multi-purpose machine for shaping Meitancuiya were optimized by the orthogonal design to analyze the effect on Meitancuiya quality.Results:The optimum temperature,time and speed of 6CDY 80-12 multi-purpose machine for shaping Meitan cuiya are 100℃,11 min and 180 r/min respectively.The dry tea processed by the optimum technological parameters has the advantages of straight flat shape,plump yellow and green color,lasting chestnut aroma,bright yellow and green liquor color,mellow taste,bright yellow and green tea-leaf but the flat bar and broken tea rate is 85% and 1.1% respectively.
