The several crisis that shook the meat sector during the past couple of years and the always rising requirements from the importing countries had no choice but to lead the Quebec pork to leave its trace. Even though group traceability represents a real progress for slaughterhouses, it is undeniable that individual traceability will soon become a proof of quality and security for main exportation markets such as Europe and Asia as well as for the Quebec consumers. According to that way of thinking, this dissertation's hypothesis states that it is conceivable to make an individual follow of the main meat cuttings without a complete reengineering of the North-American production procedures. Three different techniques permitting to make unitary traceability will be analysed and compared in order to verify the impacts of their instauration in the industry.; This study is divided in three distinctive parts: The context, the literature review and finally, the model definition.; The first part, which is the setting in context, embodies mainly three subdivisions. First of all, it is question of deepening the role and the working of every single part of the Quebec pork industry such as, for example, breeding farms and slaughterhouses. Then, the author talks about traceability itself as well as the different products related to it. He explains more precisely the working of the techniques used in each step of the pork transformation process. Finally, the problems faced by the pork industry, such as the dismantling phenomenon encountered in this particular field of activity, are defined.; This literature review analyse the different researches made on meat transformation, but, more precisely, on traceability used in that field of activity. The different technologies available and the gap existing at this level between the leading nations will be examined. The third part will firstly draw up cartography of primary pork cuttings. From there, each model is detailed and compared with the others that are conceivable. Finally, the analysis of each solution is made with different criteria used inside the decision-helping tool. This section also embodies the detailed description of the equations used inside the model.; The analysis of these methods has permitted to realise the importance of the production cadence during the setting of a cutting strategy linked to the unitary traceability. So, the evaluation of the individual cutting, of the cutting by segregation of pieces with boxes as well as of the continuous cutting, from an individual follow of the cuttings point of view, has allowed creating a tool really useful in order to orientate the choice of a production method according to the selected criteria.
