Fouling mitigation through the aggregation process

Experiments using a plate heat exchanger have been carried out to investigate fouling from whey solutions. High concentrations of native #beta#-lactoglobulin were used. The gelation properties of high concentrations were studied and a critical concentration for gel formation was botained. Heat denaturated #beta#-lactoglobulin aggregates added to the solution appeared to reduce surface fouling.
