Investigations have been made into the moisture content reduction of fish and shrimp. Electric and solar dryingrnruns were compared and the theoretical drying curves based on Fick’s diffusion law are given. It was found thatrnthe drying constant, k, was dependent on the type of product and that the dried product was fit for humanrnconsumption when dried to 20% moisture content dry basis (%mcdb).
