Crystallization in motion under air cooled/water cooled condition is an age long old process, but it suffers from the drawback of long residence time and thus development of colour as well as viscosity, which prohibit its use in high grade massecuite. Flash evaporative cooling is a rarely used technique. This technique was limited to only high grade massecuite, due to requirement of high circulation ratio, but it is free from the draw back of colour development & viscosity increase like other process of crystallization in motion. We have developed a system in our factory to optimize the crystal yield in raw massecuite. Results are very encouraging and interesting. An additional pty drop up to 4 units has been noticed, without any ill effect on the colour of raw sugar. Details of the system and analytical data have been discussed in this paper.
