MAP (Modified Atmosphere Packaging) is suitable for foods packaging; especially, for packaging of fruits and vegetables because their shelf life can be obviously extended. As compared with CAP (Contrlled Atmosphere Packaging), MAP has a number of advantages, therefore gets more and more applications. This paper introduces design procedures of MAP and indicates that in the package completed with MAP there would be an internal" independent" environment inside which the problem of optimum environmental condition would be existed that is similar to outer environment. This paper analyses the effects of O_2, CO_2 contents, C_2H_4 existence, temperature changes and relative humidity on fresh produces quality, and expresses there are still a number of problems inside the package to reach the optimum interal environment. In addition, this paper discusses some possible approaches to solve these problems.
